Ingredients

For the Chicken:

1 pound boneless, skinless chicken thighs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buttermilk

1 cup all-purpose flour

1/2 teaspoon paprika (for dredging)

Oil for frying (vegetable or peanut)

For the Hot Honey:

1/2 cup honey

1 teaspoon red pepper flakes (adjust to taste)

1 tablespoon apple cider vinegar

For the Biscuits:

2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1/4 cup cold unsalted butter, cubed

3/4 cup buttermilk (plus more for brushing)

Instructions

Marinate the Chicken: In a bowl, combine chicken thighs with buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Let it marinate for at least 30 minutes (or up to 4 hours) in the refrigerator.

Prepare the Hot Honey: In a small saucepan, combine honey, red pepper flakes, and apple cider vinegar. Gently heat over low, stirring until mixed well and warmed through. Adjust the heat level by adding more red pepper flakes if desired. Set aside.

      Make the Biscuits:

        - Preheat your oven to 425°F (220°C).

          - In a mixing bowl, whisk together 2 cups of flour, baking powder, and salt.

            - Using a pastry cutter or your fingers, cut in the cold butter until the mixture resembles coarse crumbs.

              - Pour in the buttermilk and mix until just combined—be careful not to overwork the dough.

Shape the Biscuits: Turn the dough onto a lightly floured surface and gently knead 2-3 times until it holds together. Roll out to about 1-inch thick and cut out biscuits using a round cutter. Place them on a baking sheet lined with parchment paper.

Bake the Biscuits: Brush the tops of the biscuits with a little buttermilk for a golden finish. Bake for 15-18 minutes, or until golden brown and fluffy.

Fry the Chicken: While the biscuits are baking, heat oil in a pan over medium-high heat. In a shallow dish, mix 1 cup of flour with 1/2 teaspoon paprika. Dredge the marinated chicken thighs in the seasoned flour. Fry the chicken pieces in hot oil for about 5-7 minutes on each side or until crispy and cooked through (internal temperature should reach 165°F). Remove and place on a paper towel-lined plate to drain excess oil.

Assemble the Biscuits: Slice the biscuits in half. Place a piece of fried chicken on the bottom half of each biscuit. Drizzle generously with hot honey and top with the other half of the biscuit.

Serve and Enjoy: Serve your Hot Honey Chicken Biscuits warm, with extra hot honey on the side for drizzling.
