Easy Grilled Thai Chicken Skewers

1.5 lbs chicken breast, cut into 1-inch cubes

1/4 cup soy sauce

2 tablespoons fish sauce

2 tablespoons brown sugar

1 tablespoon lime juice

3 cloves garlic, minced

1 tablespoon ginger, grated

1 teaspoon red pepper flakes (adjust for spice level)

1/2 teaspoon black pepper

1 tablespoon vegetable oil

1 red bell pepper, cut into 1-inch squares

1 yellow bell pepper, cut into 1-inch squares

1 small red onion, cut into wedges

Instructions
 

Marinate the Chicken:

    In a large bowl, whisk together the soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, red pepper flakes, black pepper, and vegetable oil. Add the chicken cubes to the marinade, ensuring each piece is well-coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes (or up to 4 hours for more flavor).

      Prepare the Skewers:

        If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill. Meanwhile, preheat your grill to medium-high heat.

          Build the Skewers:

            Once the chicken has marinated, take the skewers and alternate threading the chicken cubes, red bell pepper, yellow bell pepper, and red onion on them. Aim for about 4-5 pieces of chicken per skewer, interspersed with vegetable chunks.

              Grill the Skewers:

                Place the skewers on the preheated grill. Grill for about 10-15 minutes, turning occasionally until the chicken is cooked through and has nice grill marks. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).

                  Serve:
