1 lb boneless, skinless chicken thighs

3 tablespoons olive oil

2 teaspoons dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

4 whole pita bread or flatbreads

1 cup diced tomatoes

1 cucumber, diced

1 cup red onion, thinly sliced

1 cup lettuce, shredded

½ cup feta cheese, crumbled

½ cup tzatziki sauce (store-bought or homemade)

Instructions
 

Marinate the Chicken: In a medium bowl, combine olive oil, oregano, garlic powder, onion powder, paprika, salt, and pepper. Add chicken thighs to the bowl, coating them well with the marinade. Cover and allow to marinate in the refrigerator for at least 30 minutes, or up to 4 hours for best flavor.

    Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for about 5-7 minutes on each side, until cooked through and grilled to perfection. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C). Once done, remove from the grill, let rest for a couple of minutes, then slice into strips.

      Prep Pita and Toppings: While chicken is cooking, warm the pita bread or flatbreads on the grill for about 1 minute on each side until they are soft and pliable. Prepare the toppings by dicing tomatoes, cucumber, and slicing red onion.

        Assemble Gyros: Lay the grilled chicken strips onto the center of each pita. Top generously with diced tomatoes, cucumbers, red onions, shredded lettuce, crumbled feta cheese, and a drizzle of tzatziki sauce.
