Easy Chicken Piccata Pasta

8 oz fettuccine pasta

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (optional)

1/2 cup chicken broth

Juice of 1 lemon (about 2-3 tablespoons)

1/4 cup capers, drained and rinsed

1/4 cup fresh parsley, chopped

1/2 cup grated Parmesan cheese

Zest of 1 lemon

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

      Prepare the Chicken:

        While the pasta is cooking, pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.

          Brown the Chicken:

            In a large skillet over medium-high heat, heat 2 tablespoons of olive oil. Add the seasoned chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest on a cutting board.

              Sauté the Aromatics:

                In the same skillet, add the minced garlic and red pepper flakes (if using). Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

                  Create the Sauce:

                    Add the chicken broth, lemon juice, and capers to the skillet. Bring to a simmer, scraping up any browned bits from the bottom of the pan. Let it cook for about 2-3 minutes to slightly reduce.

                      Combine Pasta and Chicken:

                        Slice the rested chicken into strips and return it to the skillet along with the drained fettuccine. Toss everything together to coat in the sauce. If the pasta seems dry, add a little reserved pasta water, one tablespoon at a time, until you achieve the desired consistency.

                          Finish with Freshness:

                            Remove the skillet from heat. Stir in the chopped parsley, lemon zest, and grated Parmesan cheese, mixing until everything is well combined.

                              Serve:
