Ingredients

4 boneless, skinless chicken breasts

2 cups cherry tomatoes, halved

8 oz fresh mozzarella cheese, sliced

1 bunch fresh basil leaves

3 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper to taste

1 teaspoon dried Italian herbs (optional)

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C).

Prepare the baking dish: In a large baking dish, drizzle 1 tablespoon of olive oil and spread it evenly to coat the bottom.

Season the chicken: Pat the chicken breasts dry with paper towels and season both sides generously with salt, pepper, and optional dried Italian herbs.

Arrange the chicken: Place the seasoned chicken breasts in the prepared baking dish in a single layer.

Add the garlic and tomatoes: In a mixing bowl, combine the halved cherry tomatoes, minced garlic, and remaining 2 tablespoons of olive oil. Toss to combine, then pour the mixture over the chicken breasts, distributing evenly.

Layer the cheese: Place a slice of fresh mozzarella on each chicken breast, covering them entirely.

Bake: Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cheese is melted and bubbly.

Add basil and balsamic: Remove the dish from the oven and immediately top with fresh basil leaves. Drizzle balsamic vinegar over the entire dish for added flavor.

Serve: Let the dish rest for a few minutes before serving. Serve hot with a side of crusty bread or a fresh salad to complement the flavors.
