Ingredients

2 cups fresh figs, stemmed and chopped

1 cup sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup unsalted butter, softened

2 large eggs

1 cup milk

2 teaspoons baking powder

1 teaspoon almond extract

1/2 cup chopped walnuts (optional)

Powdered sugar for dusting (optional)

Instructions

Prepare the Fig Jam:

    - In a medium saucepan, combine the chopped figs, sugar, lemon juice, vanilla extract, cinnamon, and salt.

      - Cook over medium heat, stirring occasionally, until the figs break down and the mixture thickens (about 15-20 minutes).

        - Remove from heat and allow to cool completely.

          Preheat Oven:

            - Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish.

              Make the Batter:

                - In a large bowl, cream together the softened butter and sugar until light and fluffy.

                  - Add the eggs one at a time, mixing well after each addition. Then stir in the milk and both extracts.

                    Combine Dry Ingredients:

                      - In a separate bowl, sift together the flour and baking powder. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined. Fold in the walnuts if using.

                        Assemble the Bake:

                          - Pour half of the batter into the prepared baking dish and spread it evenly.

                            - Spoon the cooled fig jam over the batter, spreading it gently without mixing it in.

                              - Top with the remaining batter, spreading it out carefully over the jam.

                                Bake:

                                  - Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                                    Cool & Serve:

                                      - Allow to cool for about 10 minutes in the pan before transferring to a wire rack.

                                        - Dust with powdered sugar before slicing into squares and serving warm or at room temperature.
