8 oz whole grain spaghetti or any preferred pasta

2 cups fresh spinach, chopped

1 cup cherry tomatoes, halved

1 zucchini, julienned

1 bell pepper (red or yellow), sliced

1 cup broccoli florets

1/4 cup red onion, finely chopped

2 cloves garlic, minced

2 tbsp olive oil

1 tsp dried oregano

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the whole grain spaghetti according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the red onion and minced garlic, sautéing until fragrant (about 2 minutes).

      Add Zucchini and Broccoli: Toss in the julienned zucchini and broccoli florets. Sauté for about 3-4 minutes until they start to soften.

        Incorporate Cherry Tomatoes and Peppers: Stir in the cherry tomatoes and bell pepper, cooking for an additional 3-4 minutes. The veggies should be vibrant and tender-crisp.
