2 medium cucumbers, diced

2 large ripe tomatoes, diced

1 large avocado, diced

1/4 red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

1 teaspoon honey (or agave syrup for vegan option)

Salt and pepper to taste

Optional: 1/2 jalapeño, finely minced (for heat)

Prepare the Vegetables: Start by washing all the fresh produce. Dice the cucumbers and tomatoes into bite-sized pieces, and carefully remove the pit from the avocado. Using a spoon, scoop the avocado flesh out and dice it gently.

    Chop the Onion & Cilantro: Finely chop the red onion and fresh cilantro. If using jalapeño for a bit of spice, mince it finely as well.

      Mix the Dressing: In a small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper until well combined.

        Combine All Ingredients: In a large mixing bowl, gently combine the diced cucumbers, tomatoes, avocado, chopped onion, cilantro, and jalapeño if using.
