Ingredients

1 large cucumber, peeled and chopped

1 cup fresh mint leaves, packed

1 cup freshly squeezed lemon juice (about 4-6 lemons)

3/4 cup granulated sugar (adjust to taste)

4 cups cold water

Lemon slices and mint sprigs, for garnish

Ice cubes

Instructions

Blend the Cucumber: Place the chopped cucumber in a blender along with half of the mint leaves and 1 cup of cold water. Blend until you achieve a smooth puree.

Strain the Mixture: Using a fine-mesh strainer or cheesecloth, strain the cucumber-mint mixture into a large pitcher to separate the juice from the pulp. Press down with a spatula or spoon to extract as much juice as possible.

Mix all Ingredients: To the cucumber-mint juice, add the freshly squeezed lemon juice and granulated sugar. Stir well until the sugar dissolves completely.

Add Water: Pour in the remaining cold water and stir to combine. Taste the lemonade and adjust sweetness or acidity by adding more sugar or lemon juice if desired.

Chill: Refrigerate the lemonade for at least 30 minutes to let the flavors meld together. If you’re in a hurry, mix in a handful of ice cubes to cool it down faster.

Garnish and Serve: Serve the cucumber mint lemonade over ice in glasses. Garnish with lemon slices and fresh mint sprigs to make it visually appealing.
