Crunchy Tofu Peanut Lettuce Cups

14 oz firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon cornstarch

1/2 cup roasted peanuts, chopped

1/4 cup green onions, finely sliced

1 tablespoon fresh ginger, minced

2 cloves garlic, minced

1 tablespoon hoisin sauce

1 tablespoon lime juice

1 teaspoon chili paste (adjust to taste)

1 head of butter or iceberg lettuce, leaves separated

Fresh cilantro, for garnish

Sliced cucumber, for garnish

Instructions
 

Prepare the Tofu: Cut the pressed tofu into small cubes (about 1/2 inch each). In a large bowl, toss the tofu with soy sauce and sesame oil. Let it marinate for about 10 minutes for the flavors to enhance.

    Coat the Tofu: After marinating, sprinkle the tofu with cornstarch and carefully toss to coat evenly. This will help create a crispy texture when cooked.
