Crunchy Thai Peanut Slaw Wraps

Ingredients
  

1 ½ cups green cabbage, finely shredded

1 cup carrots, julienned

1 cup red bell pepper, julienned

½ cup fresh cilantro, chopped

½ cup green onions, sliced

1 cup edamame (shelled and cooked)

1 tablespoon sesame seeds (optional)

4 large lettuce leaves (romaine or butter lettuce works best)

For the Thai Peanut Sauce:

¼ cup creamy peanut butter

2 tablespoons soy sauce

1 tablespoon lime juice (freshly squeezed)

1 tablespoon honey or maple syrup

1 teaspoon rice vinegar

1 clove garlic, minced

1 teaspoon fresh ginger, grated

1-2 tablespoons water (to thin the sauce)

Red pepper flakes (to taste, optional)

Instructions
 

Prepare the Slaw: In a large bowl, combine the shredded cabbage, julienned carrots, red bell pepper, chopped cilantro, sliced green onions, and cooked edamame. Toss them together to mix well.

    Make the Thai Peanut Sauce: In a separate bowl, whisk together the creamy peanut butter, soy sauce, lime juice, honey or maple syrup, rice vinegar, minced garlic, and grated ginger. If the sauce is too thick, gradually add water, one tablespoon at a time, until you reach a smooth and pourable consistency. For some heat, add red pepper flakes to taste.

      Combine: Pour the peanut sauce over the slaw mixture and toss gently until all the vegetables are well coated.

        Assemble the Wraps: Lay each lettuce leaf flat on a plate. Spoon a generous portion of the crunchy slaw filling into the center of each leaf. If desired, sprinkle sesame seeds over the top for added crunch.

          Wrap and Enjoy: Fold the sides of the lettuce leaf over the filling and roll it up like a burrito. Secure with a toothpick if needed. Repeat with remaining ingredients.

            Serve: These wraps are best enjoyed fresh. Serve with remaining peanut sauce on the side for dipping!
