Crunchy Thai Peanut Cabbage Wraps

1 medium head of green cabbage

1 medium carrot, grated

1 red bell pepper, thinly sliced

1 cup cucumber, grated or julienned

1 cup red cabbage, thinly sliced

1 cup cooked, shredded chicken (or tofu for a vegetarian option)

1/4 cup chopped fresh cilantro

1/4 cup chopped green onions

1/4 cup crushed peanuts (for topping)

For the Peanut Sauce:

1/2 cup creamy peanut butter

2 tablespoons soy sauce or tamari

2 tablespoons lime juice

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

1-2 tablespoons warm water (to thin out the sauce)

Optional: a pinch of red pepper flakes for heat

Instructions
 

Prepare the Cabbage: Carefully remove the leaves from the cabbage. Choose the largest, most intact leaves for wrapping. Rinse and pat dry. Set aside.

    Make the Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey, grated ginger, and red pepper flakes (if using). Gradually add warm water, stirring until the sauce reaches a smooth, pourable consistency. Adjust the thickness by adding more water if necessary.

      Prepare the Filling: In a large mixing bowl, combine the shredded chicken or tofu, grated carrot, sliced red bell pepper, grated cucumber, sliced red cabbage, chopped cilantro, and chopped green onions. Toss gently until well mixed.

        Assemble the Wraps: Take a cabbage leaf and spoon about 1/4 cup of the filling mixture into the center. Drizzle a tablespoon of peanut sauce over the filling. Fold the sides of the cabbage leaf inward, then roll it up from the bottom to create a wrap. Repeat with the remaining cabbage leaves and filling.

          Serve: Arrange the wraps on a serving platter. Drizzle additional peanut sauce on top and sprinkle with crushed peanuts for added crunch. Serve with any leftover peanut sauce on the side for dipping.
