Crunchy Sesame Tofu Salad

Ingredients
  

14 oz firm tofu, pressed and cut into cubes

1 cup broccoli florets

1 cup red bell pepper, thinly sliced

1 cup shredded carrots

1 cup snap peas, trimmed

1/2 cup scallions, chopped

1/4 cup sesame seeds, toasted

2 tbsp soy sauce (low sodium)

2 tbsp tahini

1 tbsp rice vinegar

1 tbsp maple syrup

1 tbsp sesame oil

1 tsp ginger, grated

1 clove garlic, minced

Salt and pepper to taste

Mixed salad greens, for serving

Instructions
 

Prepare the Tofu: In a large bowl, toss the cubed tofu with 1 tablespoon of soy sauce, ginger, and garlic. Allow to marinate for 20 minutes.

    Cook the Tofu: Heat a non-stick skillet over medium heat. Add a drizzle of sesame oil. Once hot, add the marinated tofu in a single layer. Cook for about 3-4 minutes on each side until golden brown and crispy. Remove from heat and let cool slightly.

      Blanch the Vegetables: In a pot of boiling water, blanch the broccoli florets and snap peas for about 2 minutes. Drain and immediately transfer them to a bowl of ice water to stop cooking. Once cooled, drain again and set aside.

        Prepare the Dressing: In a small bowl, whisk together the tahini, rice vinegar, remaining soy sauce, maple syrup, sesame oil, salt, and pepper until smooth and well combined.

          Assemble the Salad: In a large serving bowl, combine the mixed salad greens, blanched broccoli, snap peas, red bell pepper, shredded carrots, and scallions. Add the crispy tofu on top.

            Dress the Salad: Drizzle the tahini dressing over the salad, and toss gently to combine all the ingredients coated with the dressing.

              Garnish: Sprinkle the toasted sesame seeds over the top for an extra crunch.

                Serve: Enjoy the salad chilled, or allow it to sit for 10 minutes for the flavors to meld.
