2 packs of instant ramen noodles (discard seasoning packets)

2 cups cooked chicken, shredded or diced

1 cup red cabbage, finely shredded

1 cup carrots, grated

1 red bell pepper, thinly sliced

1/2 cup green onions, chopped

1/2 cup slivered almonds (or your choice of nuts)

1/2 cup crispy wonton strips (optional for extra crunch)

1/4 cup cilantro, chopped (optional)

For the Dressing:

1/3 cup vegetable oil

1/4 cup rice vinegar

2 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated fresh ginger

Salt and pepper to taste

Prepare the Ramen Noodles: Cook the ramen noodles according to package instructions, but reduce the cooking time by 1-2 minutes for a firmer texture. Drain and rinse under cold water to stop the cooking process. Set aside.

    Make the Dressing: In a bowl, whisk together the vegetable oil, rice vinegar, soy sauce, sesame oil, honey (or maple syrup), grated ginger, and season with salt and pepper. Taste and adjust the seasoning if desired.
