8 rice paper wrappers

1 large carrot, julienned

1 medium cucumber, julienned

1 bell pepper (red or yellow), thinly sliced

1 avocado, sliced

1 cup shredded purple cabbage

Fresh mint leaves, about 1 cup

Fresh cilantro leaves, about 1 cup

1/4 cup hoisin sauce (for dipping)

1 tablespoon sesame seeds (optional)

1/2 tablespoon rice vinegar (optional, for drizzle)

Instructions
 

Prepare the Veggies: Start by washing all the vegetables. Julienne the carrot and cucumber, and thinly slice the bell pepper. Slice the avocado and shred the cabbage.

    Soak Rice Paper Wrappers: Fill a shallow dish with warm water. Dip one rice paper wrapper in the water for about 10-15 seconds until it softens, then lay it flat on a clean surface.

      Layer the Ingredients: On the lower third of the rice paper, place a small handful of shredded cabbage, followed by an even layer of julienned carrot, cucumber, and bell pepper. Arrange a few pieces of avocado, and sprinkle some fresh mint and cilantro on top.

        Roll the Spring Rolls: Fold the bottom of the rice paper over the filling, then fold in the sides. Roll it up tightly but gently to keep the ingredients intact. Set aside and repeat the process with the remaining rice paper wrappers and filling.
