Crunchy Baked Avocado Tacos

2 ripe avocados, halved and pitted

1/2 cup breadcrumbs (panko for extra crunch)

1/2 cup shredded cheddar cheese

1/4 cup grated Parmesan cheese

2 tablespoons fresh cilantro, chopped

1 tablespoon lime juice

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

8 small corn tortillas

1 cup black beans, rinsed and drained

1 cup cherry tomatoes, diced

1/2 red onion, finely chopped

Salsa and sour cream for serving (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Avocados: Scoop out the flesh from the avocado halves, placing the flesh into a mixing bowl. Be careful not to break the skins as you will use them as taco shells.

      Mix the Filling: To the bowl with the avocado, add breadcrumbs, cheddar cheese, Parmesan cheese, cilantro, lime juice, ground cumin, paprika, salt, and pepper. Mash together until well combined, but still slightly chunky.

        Fill the Shells: Gently stuff each avocado skin with the filling mixture, packing it lightly to ensure it holds together.

          Bake the Tacos: Place the filled avocado halves in a baking dish. Bake in the preheated oven for 15-20 minutes, or until the tops are golden brown and crispy.

            Warm the Tortillas: While the avocados are baking, heat the corn tortillas. You can do this on a skillet over medium heat for about 30 seconds on each side, or wrap them in aluminum foil and warm them in the oven.

              Prepare the toppings: In a bowl, toss together the black beans, diced cherry tomatoes, and chopped red onion. Season with salt and lime juice to taste.

                Assemble the Tacos: Carefully remove the baked avocado from the oven. Place one filled avocado half in each tortilla. Top with the bean mixture and additional toppings of your choice such as salsa or sour cream.
