Crunchy Avocado Spring Rolls

2 ripe avocados, diced

1 cup shredded carrots

1 cup cucumber, julienned

1 cup red bell pepper, julienned

1/2 cup fresh cilantro leaves, chopped

1/2 cup fresh mint leaves, chopped

8-10 rice paper wrappers

1 cup fresh bean sprouts

1/4 cup sesame seeds, toasted

1 tablespoon soy sauce

1 tablespoon lime juice

Peanut sauce or sweet chili sauce for dipping

Instructions
 

Prep the Veggies: In a large mixing bowl, combine the diced avocados, shredded carrots, cucumber, red bell pepper, bean sprouts, cilantro, and mint. Add the soy sauce and lime juice, tossing everything gently to combine without mashing the avocados.

    Prepare the Rice Paper Wrappers: Fill a shallow dish or bowl with warm water. Take one rice paper wrapper and soak it in the warm water for about 10-15 seconds, or until it softens. Carefully remove it and lay it flat on a large plate or clean surface.

      Fill the Wrapper: Place a generous amount of the avocado and veggie mixture in the center of the rice paper wrapper. Be mindful not to overfill, as this will make rolling difficult.

        Roll the Spring Rolls: Start by folding the bottom edge of the wrapper over the filling. Next, fold in the sides and then roll it away from you until you have a tight log. Repeat this process with the remaining wrappers and filling.

          Toast the Sesame Seeds: In a small pan over medium heat, toast the sesame seeds for about 3-4 minutes, stirring frequently until golden brown. Set aside to cool.

            Serve: Arrange the spring rolls on a platter and sprinkle the toasted sesame seeds on top for added crunch. Serve with a side of peanut sauce or sweet chili sauce for dipping.
