4 large rice paper wrappers

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 cup carrots, julienned

1 cup bell peppers, thinly sliced (use a mix of colors)

1 cup cucumber, julienned

1/2 cup green onions, sliced

1/4 cup fresh cilantro, chopped

1/4 cup fresh mint, chopped

1/4 cup roasted peanuts, crushed (optional)

For the Dressing:

3 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

1 tablespoon sesame oil

1 teaspoon sriracha (optional, for spice)

Juice of 1 lime

Salt and pepper, to taste

Prepare the Slaw: In a large mixing bowl, combine the green cabbage, red cabbage, carrots, bell peppers, cucumber, green onions, cilantro, and mint. Toss to mix well.

    Make the Dressing: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), sesame oil, sriracha (if using), lime juice, and a pinch of salt and pepper. Adjust seasoning to taste.

      Combine Dressing and Slaw: Pour the dressing over the slaw mixture and toss until all the vegetables are well coated. Allow it to sit for about 10-15 minutes to let the flavors meld.

        Prepare the Rice Paper Wraps: Fill a shallow dish or a large plate with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until softened. Remove and place it on a clean, damp kitchen towel or a cutting board.
