1 cup raw almonds

1 cup unsweetened shredded coconut

1/4 cup honey or maple syrup (for a vegan option)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup almond flour (optional, for extra crunch)

1/2 cup dark chocolate chips (for drizzling, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a food processor, add the raw almonds and pulse until coarsely chopped but not ground into flour. You want some texture!

      In a large bowl, combine the chopped almonds, shredded coconut, honey (or maple syrup), vanilla extract, and sea salt. If you are using almond flour for extra crunch, add that too.

        Mix everything well until the mixture is sticky and holds together when pressed.

          Scoop tablespoon-sized portions of the mixture and roll them into balls or press them into bite-sized clusters on the prepared baking sheet.

            Bake in the preheated oven for about 10-12 minutes or until golden brown. Keep an eye on them to avoid burning.

              Remove from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

                For added decadence, melt the dark chocolate in a microwave-safe bowl (30 seconds at a time) until smooth. Drizzle over the cooled bites and let set at room temperature or refrigerate for quicker solidification.

                  Store in an airtight container at room temperature for up to a week or in the fridge for a longer shelf life.
