Crockpot White Bean Chicken Chili

1 lb boneless, skinless chicken breasts

2 cans (15 oz each) white beans (such as cannellini or great northern), drained and rinsed

1 medium onion, diced

3 cloves garlic, minced

1 green bell pepper, diced

1 can (4 oz) diced green chilies (mild or hot based on preference)

2 cups low-sodium chicken broth

1 tsp ground cumin

1 tsp chili powder

1/2 tsp smoked paprika

1/2 tsp onion powder

1/2 tsp garlic powder

Salt and pepper to taste

1 cup frozen corn (optional)

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Shredded cheese (for serving)

Instructions
 

Prepare your Ingredients: Start by dicing the onion and green bell pepper, and mincing the garlic. Drain and rinse the white beans thoroughly.

    Layer the Crockpot: In the bottom of your crockpot, place the chicken breasts. Layer the diced onion, diced bell pepper, garlic, and green chilies on top of the chicken.

      Add the Beans & Spices: Pour the rinsed white beans over the vegetables. Sprinkle the ground cumin, chili powder, smoked paprika, onion powder, garlic powder, salt, and pepper over the top.

        Pour the Broth: Carefully pour in the chicken broth, ensuring that all the ingredients are submerged as much as possible. If you’re using corn, add it now as well.

          Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 4-5 hours, until the chicken is thoroughly cooked and tender.

            Shred the Chicken: Once cooked, remove the chicken breasts from the broth and shred them using two forks. Return the shredded chicken back to the crockpot.

              Finish the Chili: Stir in the lime juice and adjust the seasoning with additional salt and pepper if needed. Let it heat through for another 10-15 minutes.

                Serve: Ladle the chili into bowls and garnish with fresh cilantro, a dollop of sour cream or Greek yogurt, and a sprinkle of shredded cheese if desired.
