1 lb spaghetti

1 lb ground beef or turkey

2 cups Hatch green chiles, diced (fresh or canned)

1 large onion, chopped

3 cloves garlic, minced

1 (28 oz) can crushed tomatoes

1 (15 oz) can tomato sauce

1 tsp dried basil

1 tsp dried oregano

1/2 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

2 cups beef broth or chicken broth

1/2 cup grated Parmesan cheese (plus extra for serving)

1 cup shredded mozzarella cheese

Instructions
 

Brown the Meat: In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat and transfer the meat to the crockpot.

    Sauté Vegetables: In the same skillet, add a splash of olive oil and sauté the chopped onion for about 5 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Combine Ingredients: To the crockpot, add the sautéed onions and garlic, diced Hatch peppers, crushed tomatoes, tomato sauce, dried basil, dried oregano, red pepper flakes, salt, pepper, and broth. Stir to combine.

        Add Spaghetti: Break the spaghetti in half and nestle it into the sauce mixture. Push down slightly to ensure it's submerged in the liquid.

          Cook: Cover and set the crockpot to low for 4 hours or high for 2 hours. Make sure to stir halfway through for even cooking.
