Ingredients

4 boneless, skinless chicken breasts

2 large onions, thinly sliced

4 cloves garlic, minced

2 cups low-sodium beef broth

1 cup French onion dip

1 teaspoon dried thyme

1 teaspoon black pepper

½ teaspoon salt

1 tablespoon balsamic vinegar

1 cup shredded Gruyère cheese

Fresh parsley, chopped (for garnish)

Optional: baguette slices for serving

Instructions

Prepare the Chicken: Season the chicken breasts with salt and black pepper. Place them in the bottom of the crockpot.

Sauté the Onions: In a skillet over medium heat, add a bit of oil and sauté the sliced onions until they are caramelized and golden brown, about 20 minutes. Add minced garlic and cook for an additional minute until fragrant.

Mix the Sauce: In a bowl, combine beef broth, French onion dip, dried thyme, and balsamic vinegar. Stir until smooth.

Layer the Ingredients: Spread the caramelized onions and garlic over the chicken in the crockpot. Pour the broth mixture over the top, ensuring all ingredients are well distributed.

Cook: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.

Add the Cheese: About 15 minutes before serving, sprinkle the shredded Gruyère cheese over the chicken. Cover and let it melt.

Serve: Once done, carefully remove the chicken and drench it with the onion-broth sauce. Garnish with freshly chopped parsley. Serve with optional baguette slices to soak up the delicious sauce.
