Ingredients

1.5 lbs boneless, skinless chicken breasts

1 can (14 oz) artichoke hearts, drained and chopped

1 cup frozen spinach, thawed and drained

1 cup cream cheese, softened

1/2 cup sour cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 tsp onion powder

1 tsp garlic powder

1/2 tsp salt

1/2 tsp black pepper

1/2 tsp red pepper flakes (optional for heat)

Fresh parsley for garnish (optional)

Instructions

Prepare the Chicken: Place the chicken breasts in the bottom of the crockpot. Season both sides with salt, black pepper, onion powder, and garlic powder.

Make the Creamy Mixture: In a large bowl, combine softened cream cheese, sour cream, chopped artichoke hearts, thawed spinach, minced garlic, Parmesan cheese, and mozzarella cheese. Mix well until fully combined.

Combine in the Crockpot: Spread the creamy spinach artichoke mixture over the seasoned chicken in the crockpot, ensuring that the chicken is fully covered. If desired, sprinkle red pepper flakes on top for added heat.

Cook on Low: Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and shreds easily with a fork.

Shred the Chicken: Once cooked, carefully remove the chicken from the crockpot and shred using two forks. Return the shredded chicken back to the creamy mixture and stir to combine.

Garnish and Serve: Serve immediately, garnished with fresh parsley if desired. This dish pairs beautifully with rice, quinoa, or a fresh green salad. Enjoy!
