Ingredients

1.5 lbs boneless, skinless chicken breasts

1 can (15 oz) cream-style corn

1 can (15 oz) sweet corn, drained

1 packet (1 oz) ranch dressing mix

1 (10.5 oz) can cream of chicken soup

1 cup chicken broth

1 cup shredded cheddar cheese

1 cup diced onion (about 1 medium onion)

1 cup diced bell pepper (red or green, your choice)

1/2 teaspoon garlic powder

1/2 teaspoon black pepper

1 teaspoon salt (adjust to taste)

Fresh cilantro or parsley for garnish (optional)

Instructions

Prep the Chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot. Season with salt, pepper, and garlic powder.

Mix Ingredients: In a mixing bowl, combine the cream-style corn, drained sweet corn, ranch dressing mix, cream of chicken soup, chicken broth, diced onion, and diced bell pepper. Stir well until all ingredients are evenly combined.

Combine in Crockpot: Pour the corn mixture over the chicken in the crockpot. Ensure the chicken breasts are covered.

Cook: Cover the crockpot with the lid and set it on low heat. Let it cook for 6-8 hours, or on high for 3-4 hours, until the chicken is tender and fully cooked.

Shred the Chicken: About 30 minutes before serving, carefully remove the chicken breasts from the crockpot, shred them using two forks, and return the shredded chicken back to the pot.

Add Cheese: Stir in the shredded cheddar cheese until melted and well incorporated into the creamy mixture.

Serve: Once everything is well mixed and heated through, serve the creamy chicken and corn mixture over rice, mashed potatoes, or enjoy it on its own. Garnish with fresh cilantro or parsley if desired.
