Crockpot Beef and Noodles

2 lbs beef chuck roast, cut into 1-inch cubes

1 medium onion, diced

3 cloves garlic, minced

3 cups beef broth

1 cup carrots, sliced

1 cup celery, diced

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper, to taste

12 oz egg noodles

1 cup frozen peas (optional)

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, chopped (for garnish)

Instructions
 

Brown the Beef: In a large skillet over medium-high heat, brown the beef cubes on all sides for about 4-5 minutes. This step enhances the flavor but is optional if you're short on time.

    Prepare the Crockpot: Transfer the browned beef to your crockpot. Add the diced onion, minced garlic, sliced carrots, and diced celery on top of the beef.

      Add Liquids and Seasonings: In a mixing bowl, combine the beef broth, Worcestershire sauce, soy sauce, dried thyme, dried rosemary, salt, and pepper. Pour this mixture over the beef and vegetables in the crockpot.

        Cook the Beef: Cover the crockpot and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shreds with a fork.

          Cook the Noodles: About 30 minutes before serving, add the egg noodles to the crockpot. Stir well to mix them into the broth. If you’re using frozen peas, add them at this time as well.

            Thicken the Sauce (optional): If you prefer a thicker sauce, mix cornstarch with a little water to create a slurry. Stir this slurry into the crockpot about 15 minutes before serving, allowing it to thicken.

              Serve: Once the noodles are cooked and tender, taste the beef and noodle mixture, adjusting seasonings if necessary. Serve hot, garnished with freshly chopped parsley.
