Crispy Zucchini Fritters

2 medium zucchini, grated

1 teaspoon salt

½ cup all-purpose flour

¼ cup cornmeal

1 large egg, beaten

1 small onion, finely chopped

2 cloves garlic, minced

¼ cup grated Parmesan cheese

¼ teaspoon black pepper

¼ teaspoon smoked paprika

2 tablespoons fresh parsley, chopped (or 1 tablespoon dried)

Vegetable oil for frying

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth. Sprinkle with salt and let it sit for about 10-15 minutes to draw out excess moisture. After that, wring it out gently to remove as much liquid as possible.

    Mix Ingredients: In a large mixing bowl, combine the dried zucchini, all-purpose flour, cornmeal, beaten egg, chopped onion, minced garlic, Parmesan cheese, black pepper, smoked paprika, and parsley. Stir until well combined. The mixture should be somewhat thick; adjust flour or cornmeal if necessary for consistency.

      Heat Oil: Heat about 1/4 inch of vegetable oil in a large skillet over medium heat. You can test the oil by dropping a small amount of the mixture into the pan; it should sizzle immediately.

        Fry Fritters: Using a spoon or small scoop, drop about 2 tablespoons of the mixture into the hot oil, flattening them slightly with the back of the spoon. Cook for about 3-4 minutes on each side or until golden brown and crispy. Don't overcrowd the pan; you may need to do this in batches.
