Ingredients

1 lb boneless, skinless chicken thighs, diced into bite-sized pieces

1 cup all-purpose flour

1 cup panko breadcrumbs

2 large eggs, beaten

1/2 tsp salt

1/4 tsp black pepper

1/4 tsp garlic powder

1/4 tsp onion powder

1 cup teriyaki sauce (store-bought or homemade)

2 tbsp vegetable oil (for frying)

Optional: Sesame seeds and chopped green onions for garnish

Instructions

Prepare the Chicken: In a bowl, combine the diced chicken thighs, salt, black pepper, garlic powder, and onion powder. Mix well until chicken is evenly coated with the seasonings.

Set Up Breading Station: Place the flour in one shallow dish, the beaten eggs in another, and the panko breadcrumbs in a third shallow dish.

Bread the Chicken: Start by dredging each piece of seasoned chicken in the flour, shaking off excess. Then dip it into the beaten eggs, allowing any excess to drip off. Finally, coat it in panko breadcrumbs, pressing gently to adhere.

Heat the Oil: In a large skillet, heat the vegetable oil over medium-high heat. Make sure the oil is hot enough by testing with a few breadcrumbs; they should sizzle upon contact.

Fry the Chicken: In batches, add the breaded chicken bites to the hot oil, making sure not to overcrowd the skillet. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Remove them from the skillet and place them on a paper towel-lined plate to drain excess oil.

Glaze with Teriyaki Sauce: In a separate pan, warm the teriyaki sauce over low heat. Once warm, add the fried chicken bites to the pan, tossing gently to coat each piece in the sauce.

Serve: Transfer the teriyaki chicken bites to a serving platter. Garnish with sesame seeds and chopped green onions if desired. Serve immediately while they are hot and crispy!
