1.5 lbs baby Yukon Gold potatoes

4 cloves of garlic, minced

1/4 cup olive oil

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1 teaspoon paprika (smoked or sweet)

1 tablespoon fresh rosemary, finely chopped

1 tablespoon fresh parsley, chopped (for garnish)

Optional: Grated Parmesan cheese for serving

Instructions
 

Boil the Potatoes: In a large pot, add the baby Yukon Gold potatoes and cover with water. Add a pinch of salt and bring to a boil. Let them cook for about 15-20 minutes until fork-tender but not mushy. Drain and let cool slightly.

    Preheat the Oven: While the potatoes are cooling, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

      Prepare the Garlic Oil: In a small bowl, combine the minced garlic, olive oil, sea salt, black pepper, paprika, and chopped rosemary.

        Smash the Potatoes: Once the potatoes are cool enough to handle, place them on the prepared baking sheet. Using a potato masher or the bottom of a glass, gently smash each potato until it’s about 1/2-inch thick.

          Season the Potatoes: Brush each smashed potato generously with the garlic oil mixture, making sure to get the minced garlic on top for extra flavor.

            Bake the Potatoes: Roast in the preheated oven for 25-30 minutes, or until the edges turn golden brown and crispy.

              Garnish and Serve: Remove the potatoes from the oven and sprinkle with fresh parsley and, if desired, a sprinkle of grated Parmesan cheese. Serve hot and enjoy the crunchy garlic goodness!
