Instructions

Prep the Shrimp:

    - In a food processor, add the peeled and deveined shrimp. Pulse until roughly chopped. You want a mix of chopped and finely minced shrimp for texture.

      Mix Ingredients:

        - In a large mixing bowl, combine the chopped shrimp, Panko breadcrumbs, scallions, minced garlic, grated ginger, sesame oil, soy sauce, cornstarch, egg, salt, and black pepper. Mix until all ingredients are well incorporated. The mixture should hold together but be slightly sticky.

          Form Balls:

            - Wet your hands with water to prevent sticking. Take a tablespoon of the shrimp mixture and roll it into a ball about 1 to 1.5 inches in diameter. Place the formed balls on a plate.

              Heat Oil:

                - In a deep pot or fryer, heat about 2 inches of vegetable oil to 350°F (175°C). Use a thermometer for accurate temperature.

                  Fry the Shrimp Balls:

                    - Carefully add the shrimp balls to the hot oil, making sure not to overcrowd the pot. Fry in batches for about 4-5 minutes or until they are golden brown and cooked through. Use a slotted spoon to remove the shrimp balls and drain on paper towels.

                      Prepare Sweet Chili Sauce:

                        - In a small bowl, whisk together the sweet chili sauce, rice vinegar, soy sauce, and crushed red pepper flakes (if using). Adjust the flavors to your preference.

                          Serve:

                            - Arrange the crispy shrimp balls on a serving platter. Drizzle the sweet chili sauce over the top or serve it on the side for dipping. Garnish with fresh cilantro leaves for a pop of color.
