Ingredients

1 lb medium-sized carrots, peeled and cut into fry shapes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon ground cumin

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon freshly ground black pepper

2 tablespoons grated Parmesan cheese (optional)

Fresh parsley, chopped, for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and ensure even roasting.

Prepare the Carrots: In a large bowl, toss the cut carrot fries with olive oil, garlic powder, smoked paprika, ground cumin, salt, and pepper. Make sure the carrots are evenly coated for maximum flavor.

Spread on Baking Sheet: Lay the carrot fries in a single layer on the prepared baking sheet. Avoid overcrowding to achieve the crispiest texture possible. If needed, use two baking sheets.

Roasting: Roast the carrots in the preheated oven for 25-30 minutes. Halfway through the cooking time, remove the baking sheet and flip the fries to promote even roasting.

Add Cheese (Optional): If using Parmesan cheese, sprinkle it on the fries during the last 5 minutes of cooking to allow it to melt and create an irresistibly crispy topping.

Final Touches: Once the fries are golden-brown and crispy, remove them from the oven and let them cool for a couple of minutes. Garnish with chopped parsley, if desired.

Serve: Enjoy your crispy roasted carrot fries as a snack, appetizer, or a healthy side dish! They pair excellently with your favorite dip or sauce.
