2 medium zucchinis

1 cup grated Parmesan cheese

1 cup panko bread crumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

½ teaspoon salt

¼ teaspoon black pepper

2 large eggs

1 tablespoon olive oil (for baking)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut off the ends and slice them into thin rounds, about 1/4 inch thick. For extra crispiness, you can sprinkle a pinch of salt on the slices and let them sit for 10 minutes to draw out moisture, then pat them dry with paper towels.

      Make the Coating: In a large mixing bowl, combine the grated Parmesan cheese, panko bread crumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well blended.

        Prepare the Egg Wash: In a separate bowl, beat the eggs until well mixed.

          Coat the Zucchini Slices: Dip each zucchini slice into the egg mixture first, allowing excess to drip off, then coat it in the Parmesan breading mixture. Press gently to make sure the coating adheres well.

            Arrange on Baking Sheets: Lay the coated zucchini slices in a single layer on the prepared baking sheets, ensuring they are not overlapping.

              Drizzle with Olive Oil: Lightly drizzle the zucchini chips with olive oil to help them crisp up and turn golden.

                Bake: Place the baking sheets in the preheated oven and bake for 20-25 minutes, or until the chips are golden brown and crispy. Flip halfway through to ensure even cooking.
