Crispy Parmesan Corn Ribs

4 large ears of sweet corn

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp smoked paprika

½ tsp salt (adjust to taste)

½ tsp black pepper

½ cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

¼ cup fresh parsley, chopped (for garnish)

Olive oil spray or oil for brushing

Instructions
 

Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the corn: Stand each ear of corn upright on a cutting board. Carefully slice down the sides to remove the kernels, keeping the kernels as intact as possible. Once all kernels are removed, take each cob and slice it in half lengthwise to create rib-like structures.

      Make the breading: In a shallow bowl, combine the grated Parmesan cheese, garlic powder, smoked paprika, salt, and black pepper. In another shallow bowl, place the flour. In a third bowl, whisk the eggs until frothy. Finally, place the panko breadcrumbs in a fourth bowl.

        Coat the corn ribs: First, dip each corn rib in the flour until well coated, shaking off any excess. Next, dip it into the egg mixture, ensuring it's fully covered. Finally, press the corn rib into the Parmesan breadcrumb mixture, making sure to coat it evenly.

          Arrange for baking: Place the coated corn ribs on the prepared baking sheet in a single layer. Spray or brush with olive oil to promote crispiness.

            Bake: Bake in the preheated oven for 20-25 minutes or until golden brown and crispy. Flip the corn ribs halfway through for even cooking.

              Garnish and serve: Once cooked, remove the corn ribs from the oven and allow them to cool slightly. Garnish with fresh parsley and serve immediately, with your favorite dipping sauce if desired.
