Ingredients

1 pound boneless, skinless chicken breasts (4 small pieces)

1 cup all-purpose flour

2 large eggs

1 cup breadcrumbs (preferably panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon dried oregano

Salt and black pepper, to taste

1/4 cup grated Parmesan cheese (optional for added flavor)

Olive oil spray or 2 tablespoons olive oil

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to ensure easy cleanup and prevent the cutlets from sticking.

Prepare the Chicken: If the chicken breasts are thick, slice them in half horizontally to create thinner cutlets. This will help them cook evenly and become crispy.

Set Up the Breading Station: In three separate shallow dishes, set up your breading station:

        - In the first dish, add the flour and season it with salt and pepper.

          - In the second dish, whisk the eggs until smooth. You can season with a dash of salt if desired.

            - In the third dish, mix the breadcrumbs, garlic powder, onion powder, paprika, oregano, and grated Parmesan cheese (if using). Make sure everything is well combined.

Bread the Chicken: Dip each chicken cutlet first into the flour, shaking off any excess. Next, dip it in the egg wash, allowing the excess to drip off. Finally, coat the cutlet in the breadcrumb mixture, pressing gently to ensure an even coating. Place the breaded cutlet on the prepared baking sheet. Repeat this process for all the cutlets.

Add Oil for Crispiness: Lightly spray the tops of the breaded cutlets with olive oil spray or drizzle with a little olive oil to promote crispiness during baking.

Bake Them: Place the baking sheet in the preheated oven and bake for 18-20 minutes, or until the chicken is cooked through and the cutlets are golden brown and crispy. You can flip them halfway through the cooking time for even crisping if desired.

Serve: Once baked, let the chicken cutlets rest for a few minutes before serving. This allows the juices to redistribute. Serve with your favorite dipping sauce, a squeeze of lemon, or alongside a fresh salad or pasta.
