2 lbs (about 900g) baby potatoes, diced into 1-inch cubes

3 tablespoons olive oil

1 tablespoon lemon zest (from about 1 large lemon)

3 tablespoons freshly squeezed lemon juice

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). This high temperature is key to achieving the crispiness we're aiming for.

    Prepare the Potatoes: In a large mixing bowl, combine the diced baby potatoes with olive oil, lemon zest, lemon juice, garlic powder, onion powder, smoked paprika, oregano, thyme, salt, and pepper. Toss everything together until the potatoes are evenly coated.

      Arrange on a Baking Sheet: Line a baking sheet with parchment paper for easy cleanup. Spread the potato cubes out in a single layer on the prepared baking sheet, ensuring they are not overcrowded. This will help them crisp up better.
