4 large russet potatoes

4 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1/2 cup freshly grated Parmesan cheese

2 tablespoons fresh parsley, chopped (for garnish)

Optional: chili flakes for extra heat

Prep the Potatoes: Preheat your oven to 425°F (220°C). Wash and peel the russet potatoes. Cut them into evenly sized strips, about 1/4 inch thick, to ensure they cook uniformly.

    Soak the Fries: Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

      Parboil: After soaking, drain the fries and rinse them under cold water. Then, bring a pot of salted water to a boil and add the fries. Parboil the fries for about 5 minutes, then drain and let them rest on a clean kitchen towel to dry completely.

        Seasoning Mix: In a small bowl, mix together the minced garlic, sea salt, black pepper, and smoked paprika.

          Coat with Oil and Seasoning: In a large mixing bowl, toss the dry fries with olive oil, ensuring they are well coated. Then, sprinkle the seasoning mixture over the fries and toss again to distribute the flavors evenly.

            Bake the Fries: Spread the fries in a single layer on a large baking sheet lined with parchment paper. Bake in the preheated oven for 25-30 minutes, flipping them halfway through, until they are golden brown and crispy.

              Add Parmesan: Once the fries are crispy, remove them from the oven and sprinkle freshly grated Parmesan cheese over the hot fries. Return them to the oven for an additional 5 minutes, or until the cheese is melted and slightly golden.

                Finish and Serve: Remove the fries from the oven, sprinkle with fresh parsley and, if desired, a pinch of chili flakes for a bit of heat. Serve immediately while they’re hot and enjoy the crispy goodness!
