2 lbs chicken wings

1 tablespoon baking powder (not baking soda)

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon cayenne pepper (adjust to taste)

1 tablespoon brown sugar

1 teaspoon dried thyme

1 teaspoon dried oregano

1 teaspoon mustard powder

Fresh parsley, chopped (for garnish)

Optional: hot sauce for serving

Prepare the Chicken Wings: If not already done, pat the chicken wings dry with paper towels. This step is crucial for achieving crispy skin.

    Create the Dry Rub: In a large bowl, combine baking powder, salt, black pepper, smoked paprika, garlic powder, onion powder, cayenne pepper, brown sugar, thyme, oregano, and mustard powder. Mix until well combined.

      Coat the Wings: Add the chicken wings to the bowl with the dry rub. Toss the wings until they are evenly coated with the seasoning mixture.

        Set Up for Baking: Preheat your oven to 425°F (220°C). Line a baking sheet with aluminum foil for easy cleanup, and place a wire rack on top. This will allow the hot air to circulate, crisping the wings on all sides.
