Crispy Chickpea Snack Mix

2 cans (15 oz each) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

1/2 teaspoon sea salt

1 cup mixed nuts (almonds, cashews, walnuts)

1/2 cup pumpkin seeds

1 cup pretzel bites or sticks

1 tablespoon fresh rosemary, finely chopped (optional)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.

    Prepare Chickpeas: After rinsing the chickpeas, pat them dry thoroughly with paper towels. This step is crucial for achieving that crispy texture.

      Season Chickpeas: In a large bowl, mix the chickpeas with olive oil, smoked paprika, garlic powder, onion powder, ground cumin, cayenne pepper, and sea salt. Toss until all the chickpeas are evenly coated with the spices.

        Roast Chickpeas: Spread the seasoned chickpeas evenly on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, or until golden and crispy, shaking the pan halfway through cooking to ensure even roasting.

          Mix Dry Ingredients: While the chickpeas are roasting, prepare the snack mix. In a large bowl, combine the mixed nuts, pumpkin seeds, pretzel bites, and fresh rosemary (if using). Stir to mix well.

            Combine: Once the chickpeas are done roasting, remove them from the oven and let them cool for about 5 minutes. Then, add them to the bowl with the nut and pretzel mixture. Gently toss everything together until well combined.

              Taste and Adjust: Give your snack mix a taste. Add more salt or cayenne pepper if desired, and mix again.

                Storage: Allow the snack mix to cool completely before transferring it to an airtight container. It can be stored at room temperature for up to a week.
