Crispy Chickpea & Feta Salad

For the Crispy Chickpeas:

1 can (15 oz) chickpeas, rinsed and drained

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon sea salt

¼ teaspoon black pepper

For the Salad:

3 cups mixed salad greens (such as arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, thinly sliced

½ cup crumbled feta cheese

¼ cup Kalamata olives, pitted and halved

Fresh parsley, chopped (for garnish)

For the Dressing:

3 tablespoons olive oil

1 tablespoon red wine vinegar

1 teaspoon Dijon mustard

1 teaspoon honey (or maple syrup for a vegan option)

Salt and pepper to taste

Instructions
 

Prepare the Crispy Chickpeas:

    - Preheat the oven to 400°F (200°C).

      - Rinse and drain the chickpeas. Pat them dry with a clean kitchen towel to remove excess moisture.

        - In a large bowl, toss the chickpeas with olive oil, smoked paprika, garlic powder, sea salt, and black pepper.

          - Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.

            - Bake for 25-30 minutes, stirring halfway through, until golden and crispy.

              Make the Salad:

                - While the chickpeas are baking, prepare the salad ingredients. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, feta cheese, and Kalamata olives.

                  - Toss gently to combine.

                    Prepare the Dressing:

                      - In a small bowl or jar, whisk together olive oil, red wine vinegar, Dijon mustard, honey, salt, and pepper until well combined.

                        Assemble the Salad:

                          - Once the chickpeas are done baking, let them cool for a few minutes.
