Crispy Chicken Taco Bites

For the Chicken:

2 cups cooked chicken, shredded

1 cup cheddar cheese, shredded

1/2 cup cream cheese, softened

1 teaspoon taco seasoning

1/4 cup fresh cilantro, chopped

Salt and black pepper to taste

For the Taco Bites:

1 package of mini phyllo dough cups or wonton wrappers

1 egg, beaten (for egg wash)

For the Toppings:

1 cup shredded lettuce

1 cup diced tomatoes

1 avocado, diced

1/2 cup sour cream

1/4 cup sliced jalapeños (optional)

Lime wedges for garnishing

Instructions
 

Prep the Filling: In a large mixing bowl, combine the shredded chicken, cheddar cheese, cream cheese, taco seasoning, chopped cilantro, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

    Prepare the Cups: If using phyllo dough cups, preheat your oven to 375°F (190°C). Place the phyllo cups on a baking sheet. If using wonton wrappers, spray a muffin tin with cooking spray and press the wrappers into the muffin cups to form small bowls.

      Fill the Cups: Spoon the chicken filling generously into each phyllo cup or wonton wrapper, ensuring they are packed but not overflowing.

        Apply Egg Wash: Brush the edges of the phyllo cups or wonton wrappers with the beaten egg to promote golden brown crispiness while baking.

          Bake: Place the baking sheet or muffin tin in the preheated oven. Bake for 12-15 minutes, or until the cups are golden brown and crispy.

            Assemble the Tacos: Once they are out of the oven and slightly cooled, top each taco bite with shredded lettuce, diced tomatoes, diced avocado, jalapeños (if using), and a dollop of sour cream.

              Serve: Sprinkle with additional cilantro and serve on a platter with lime wedges for squeezing over the top.
