Ingredients

1 lb (450g) chicken breast, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs, beaten

1 cup breadcrumbs (preferably Italian seasoned)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup marinara sauce (for serving)

Fresh basil leaves, for garnish

Olive oil, for frying

Instructions

Prepare the Dredging Station: In three separate bowls, set up your dredging station. In the first bowl, place the flour. In the second bowl, add the beaten eggs. In the third bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, oregano, salt, and black pepper.

Coat the Chicken: Take a piece of chicken and dip it into the flour, making sure it’s fully coated. Shake off any excess flour before dipping it into the egg mixture, allowing any extra egg to drip off. Finally, roll the chicken in the breadcrumb mixture, pressing gently to adhere the crumbs.

Heat the Oil: In a large skillet, pour enough olive oil to cover the bottom of the skillet by about 1/4 inch. Heat the oil over medium heat until it shimmers (about 350°F / 175°C).

Fry the Bites: Carefully add the coated chicken pieces to the hot oil in a single layer. Fry in batches to avoid overcrowding. Cook for about 3-4 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Use a slotted spoon to transfer the cooked bites to a paper towel-lined plate to drain excess oil.

Serve with Marinara: Arrange the crispy chicken Parmesan bites on a serving platter. Serve warm with marinara sauce on the side for dipping. Garnish with fresh basil leaves for a burst of color and flavor.

Enjoy! Dive into these delicious, crispy chicken bites – perfect for parties or a cozy night in!
