2 cups green cabbage, finely shredded

1 cup carrots, grated

1/2 onion, finely chopped

2 cloves garlic, minced

1/2 cup all-purpose flour (or chickpea flour for a gluten-free option)

2 large eggs

1 tsp baking powder

1 tsp cumin powder

1/2 tsp paprika

Salt and pepper, to taste

1/4 cup fresh parsley, chopped (or cilantro)

Oil for frying (canola or vegetable oil)

Instructions
 

Prep the Vegetables: Start by finely shredding the cabbage and grating the carrots. Place them in a large bowl along with the chopped onion and minced garlic.

    Mix the Batter: In a separate bowl, whisk together the flour, baking powder, cumin powder, paprika, salt, and pepper. Once combined, add the eggs and mix until a smooth batter forms.

      Combine: Pour the batter over the vegetable mixture. Add the chopped parsley and mix until everything is well-coated and evenly distributed. You want a thick consistency; if the mixture seems too wet, add a touch more flour.

        Heat the Oil: In a large skillet, heat about 1/4 inch of oil over medium heat. It should be hot enough that a small drop of batter sizzles when added.
