2 medium zucchinis

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

2 large eggs

1/4 cup all-purpose flour

Cooking spray (or olive oil for drizzling)

Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    Prepare the zucchinis: Wash the zucchinis and cut them into fry-shaped sticks, about 1/4 inch thick. Make sure they are uniform to ensure even cooking.

      Set up the dredging station: In three separate shallow bowls, set up your dredging station:

        - In the first bowl, place the flour and season it with a pinch of salt and pepper.

          - In the second bowl, beat the eggs.

            - In the third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper. Mix well.

              Coat the zucchini fries: Take each zucchini stick and first dip it in the flour, shaking off any excess.
