Timing is crucial when it comes to preparing a stir-fry that maintains the lovely crunch of your vegetables. To achieve the perfect texture, it's best to follow a specific order when adding ingredients to your pan. Start with your tofu, allowing it to sear and develop a golden crust. Then, add any heartier vegetables such as bell peppers and carrots first, giving them a few extra minutes to cook before introducing more delicate options like snap peas or bean sprouts.

Ingredients

For the Tofu:

1 block (14 oz) firm tofu, drained and pressed

3 tablespoons cornstarch

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

For the Stir-Fry:

1 tablespoon sesame oil

1 bell pepper, sliced (any color)

1 medium carrot, julienned

1 cup broccoli florets

2 cloves garlic, minced

1 inch ginger, grated

3 green onions, chopped

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame seeds (for garnish)

For the Wraps:

4 large lettuce leaves (butter or romaine)

Optional: Sriracha or hoisin sauce for drizzling

Instructions

Prepare the Tofu: Preheat your oven to 400°F (200°C). Cut the pressed tofu into equal-sized cubes. In a mixing bowl, combine the cornstarch, soy sauce, olive oil, garlic powder, smoked paprika, salt, and pepper. Add the tofu cubes and toss gently until they are evenly coated.

Bake the Tofu: Arrange the tofu cubes on a baking sheet lined with parchment paper in a single layer. Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy.

Stir-Fry the Vegetables: In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Add the sliced bell pepper, julienned carrot, and broccoli florets. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.

Combine with Tofu: Once the tofu is done baking, add it to the skillet with the vegetables. Pour in the soy sauce and rice vinegar, tossing everything together gently. Cook for another 2-3 minutes to combine the flavors. Remove from heat and stir in the chopped green onions.

Assemble the Wraps: To serve, place a few spoonfuls of the tofu stir-fry mixture on the center of a lettuce leaf. Drizzle with Sriracha or hoisin sauce if desired, then fold the sides of the lettuce over the filling and roll it up tightly.

Garnish and Enjoy: Top the wraps with sesame seeds for a nice crunch. Serve fresh, and enjoy your crispy baked tofu stir-fry wraps!
