2 medium zucchinis

1 cup panko breadcrumbs

½ cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

½ tsp paprika

½ tsp salt

2 large eggs

1 tbsp olive oil (optional for drizzling)

Prep the Zucchini: Start by washing and drying the zucchinis. Cut off the ends, then slice them into thin rounds, about 1/4 inch thick. For added crispiness, you can pat them dry with a paper towel to remove excess moisture.

    Make the Coating: In a mixing bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, paprika, salt, and pepper. Mix well to ensure the seasonings are evenly distributed.

      Prepare the Egg Wash: In another bowl, beat the eggs until they are well mixed. This will help the breadcrumbs adhere to the zucchini.

        Coat the Zucchini: Dip each zucchini slice into the egg wash, ensuring it is fully coated, then immediately transfer it to the breadcrumb mixture. Press the zucchini down gently to help the crumbs stick, then place it on a plate. Repeat until all zucchini slices are coated.
