8 oz (225 g) pasta of your choice (penne or fettuccine work well)

2 medium zucchinis, diced

1 cup cherry tomatoes, halved

1 cup heavy cream

1/2 cup grated Parmesan cheese

3 cloves garlic, minced

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon dried Italian herbs (basil, oregano, or thyme)

Fresh basil leaves, for garnish

Optional: Red pepper flakes, for a spicy kick

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Sauté the Vegetables:

        In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant but not browned. Then, add the diced zucchinis and cook for 5–7 minutes until they are tender and lightly browned.

          Add Cherry Tomatoes:

            Stir in the halved cherry tomatoes and cook for an additional 3–4 minutes until they begin to soften.

              Make the Cream Sauce:

                Reduce the heat to low and pour in the heavy cream. Stir to combine with the zucchinis and tomatoes. Allow it to simmer gently for about 3 minutes.

                  Incorporate Cheese and Seasoning:

                    Add the grated Parmesan cheese and mix until melted and fully incorporated. If the sauce is too thick, gradually add reserved pasta water until reaching your desired consistency. Season with Italian herbs, salt, and pepper to taste. If you like a bit of heat, add red pepper flakes at this stage.

                      Combine Pasta and Sauce:

                        Add the drained pasta to the skillet and toss everything together until the pasta is well coated with the creamy sauce. Cook for an additional 1–2 minutes to heat through.

                          Serve:

                            Plate the creamy zucchini tomato pasta and garnish with fresh basil leaves for a pop of color and flavor. Enjoy warm!
