Creamy Wild Mushroom Pasta

8 oz fettuccine or tagliatelle pasta

2 tbsp olive oil

1 tbsp unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

12 oz assorted wild mushrooms (such as shiitake, oyster, and cremini), sliced

1/2 cup dry white wine (optional)

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional, for a fresh finish)

Instructions
 

Cook the Pasta:

    - Bring a large pot of salted water to a boil. Add the fettuccine or tagliatelle and cook according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water and drain the pasta.

      Sauté Vegetables:

        - In a large skillet over medium heat, add olive oil and butter. Once melted, add the chopped onion and sauté for about 3-4 minutes until translucent.

          Add Garlic and Mushrooms:

            - Stir in the minced garlic and sliced wild mushrooms. Cook for about 5-7 minutes or until the mushrooms are tender and have released their juices, stirring occasionally.

              Deglaze the Pan:

                - If using white wine, pour it into the skillet to deglaze, scraping any bits stuck to the pan. Let it simmer for about 2-3 minutes until the wine reduces by half.

                  Make the Sauce:

                    - Lower the heat and stir in the heavy cream. Bring to a gentle simmer and let cook for another 3-4 minutes until slightly thickened.

                      Combine Pasta and Sauce:

                        - Add the cooked pasta directly to the sauce, then toss to combine. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.

                          Add Cheese and Seasoning:

                            - Stir in the grated Parmesan cheese and fresh thyme, and season with salt and pepper to taste. Mix until the cheese is melted and the pasta is well-coated.

                              Serve:

                                - Divide the creamy mushroom pasta into serving bowls. Garnish with chopped parsley and lemon zest, if desired. Enjoy immediately!
