12 oz cheese tortellini (fresh or frozen)

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and black pepper, to taste

1 cup freshly shredded Parmesan cheese

1/4 cup fresh basil leaves, chopped

Additional basil leaves for garnish

Crusty bread, for serving (optional)

Instructions
 

Cook the Tortellini: In a large pot of salted boiling water, cook the tortellini according to package instructions until al dente. Drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, stirring frequently, until fragrant but not browned.

      Add Tomatoes: Stir in the can of diced tomatoes (with juices), and let it simmer for 3-4 minutes, allowing the flavors to meld.

        Make the Cream Sauce: Reduce heat to low and pour in the heavy cream. Sprinkle in Italian seasoning, salt, and black pepper. Stir well and let simmer for another 3-5 minutes until the sauce thickens slightly.

          Combine with Tortellini: Add the cooked tortellini to the skillet, mixing it well with the creamy tomato sauce. Let everything cook together for 2-3 minutes, allowing the tortellini to absorb some of the sauce.

            Add Cheese and Basil: Remove the skillet from heat and fold in the shredded Parmesan cheese until melted and creamy. Finish by stirring in the chopped fresh basil, reserving a little for garnish.

              Serve & Garnish: Serve the creamy tortellini in bowls, garnished with extra basil leaves on top. Enjoy with crusty bread if desired!
