Creamy Thai Peanut Noodles

8 oz rice noodles

1/2 cup creamy peanut butter

1/4 cup soy sauce (or tamari for gluten-free)

2 tbsp lime juice (freshly squeezed)

1 tbsp honey or maple syrup

1 tbsp sesame oil

1 garlic clove, minced

1 tsp fresh ginger, grated

1/2 tsp red pepper flakes (adjust to taste)

1 cup bell peppers, thinly sliced (mix of red, yellow, and green)

1 cup shredded carrots

1 cup snap peas or sugar snap peas

1 green onion, sliced (for garnish)

1/4 cup chopped cilantro (for garnish)

Chopped peanuts (for garnish)

Instructions
 

Cook the Noodles: In a large pot of boiling salted water, cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, honey or maple syrup, sesame oil, minced garlic, grated ginger, and red pepper flakes until smooth and creamy. If the sauce is too thick, add a little warm water until you reach the desired consistency.

      Sauté the Vegetables: In a large skillet or wok over medium heat, add a splash of oil. Add the bell peppers, shredded carrots, and snap peas. Sauté for about 4-5 minutes until the vegetables are tender but still crisp.

        Combine Noodles and Sauce: Add the cooked rice noodles to the skillet with the sautéed vegetables. Pour the creamy peanut sauce over the top, tossing everything together until the noodles and veggies are well coated. Cook for an additional 2-3 minutes to heat through.
