2 cups rolled oats

1 cup sunflower seed butter

1/2 cup honey or maple syrup

1/2 cup almond milk (or any non-dairy milk)

1/2 cup almond flour (or any flour of choice)

1/4 cup chia seeds

1/4 cup mini chocolate chips (or dried fruit for a healthier twist)

1 teaspoon vanilla extract

1/2 teaspoon salt

1/2 teaspoon cinnamon (optional)

Instructions
 

Prepare the Baking Dish: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix the Wet Ingredients: In a large bowl, combine the sunflower seed butter, honey (or maple syrup), almond milk, and vanilla extract. Stir until the mixture is smooth and well incorporated.

      Combine the Dry Ingredients: In another bowl, mix together the rolled oats, almond flour, chia seeds, salt, and cinnamon. Ensure everything is evenly combined.

        Combine Wet and Dry Mixtures: Pour the dry mixture into the bowl with the wet ingredients. Stir until all the dry ingredients are coated and evenly mixed. If using, gently fold in the chocolate chips or dried fruit.

          Transfer to Baking Dish: Scoop the mixture into the prepared baking dish and press it down firmly with a spatula or your hands to create an even layer. Make sure it’s tightly packed for the bars to hold together after baking.

            Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and the center feels set.

              Cool: Once done, remove the bars from the oven and allow them to cool in the dish for about 10 minutes. Use the parchment paper to lift them out and let them cool completely on a wire rack.
