Creamy Sun-Dried Tomato Shrimp Pasta

12 oz linguine or fettuccine pasta

1 lb large shrimp, peeled and deveined

1 cup sun-dried tomatoes in oil, drained and chopped

1 cup heavy cream

1 cup grated Parmesan cheese

4 cloves garlic, minced

1 medium onion, finely chopped

2 tbsp olive oil

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves for garnish

Zest and juice of 1 lemon

Cook the Pasta:

    In a large pot of salted boiling water, cook the linguine or fettuccine according to package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

      Sauté the Shrimp:

        In a large skillet over medium heat, heat 2 tablespoons of olive oil. Add the minced garlic and chopped onion, sautéing for 2-3 minutes until translucent. Then, add the shrimp and season with salt, pepper, and red pepper flakes. Cook for 2-3 minutes on each side until the shrimp turns pink and opaque. Remove the shrimp from the skillet and set aside.

          Make the Creamy Sauce:

            In the same skillet, add the chopped sun-dried tomatoes. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until it melts smoothly into the sauce. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

              Combine:

                Return the cooked shrimp to the skillet, and add the cooked pasta. Toss everything together until the pasta and shrimp are well-coated with the creamy sauce. Add lemon zest and juice, adjusting seasoning with salt and pepper if needed.
